Hummus (vegan, gluten-free)


Hummus is always a hit, bring it to a party, slap it on a sandwich, dip in some chips or veggies.  Hummus is one of those things you should always make yourself if you have the time.  I'm never happy with the store bought, with the price or the taste.  What really makes this hummus great is the fresh lemon juice and anything you buy is just not going to be that fresh.   You can use canned garbanzos (aka chickpeas) or dried.


Makes about 3 cups

Recipe:
1 large can of garbanzo beans, drained. Or about three cups cooked dry beans
2 tbs. of the reserved liquid from the can or from the cooking of the beans 
Zest and juice of 1 lemon
3 tbs. tahini
1/3 c. olive oil
2 cloves of garlic
1/2 tsp. hot paprika 
2 tsp. kosher salt 

Method:
1. Add all of the ingredients to the food processor.  
2. Purée until smooth. 
3. Add more lemon juice, paprika and/or salt to taste.
